Berry monday: muffins

Welcome to the second berry Monday! Before I share how I used some of these berries I wanted to introduce you to all the berries that are featured in upcoming recipes.

First on my recipe list are muffins! I used the following berries:

Blueberries:

For the muffins I used a basic fat free vegan muffin recipe that also uses whole wheat pastry flour (fat free means you’ll usually see applesauce in place of oil in the recipe). You can also find a traditional basic muffin recipe if you prefer. I then split the recipe into thirds. To 1/3 I folded in about a 1/3 cup of blueberries, to the next 1/3 I folded in 1/3 cup of tayberries, and then the final 1/3 was pretty exciting. Since the boysenberries are so large I put a little bit of batter on the bottom of the muffin liner, I placed a berry on top, and covered it with batter making what I hoped would be a berry center filled muffin. Each berry mixture made 4 muffins for a total of 12.

They were delicious and my berry filled muffin was a success!

Berry monday: u-pick

It seems I have been a bit berry crazed this summer so I thought it would be fun to write a berry related post every Monday for the next few weeks. I have pictures, recipes, ideas, and tips so basically it should be really fun.

First up is my trip to the most amazing u-pick berry farm I’ve ever been to. I picked 17 pounds of berries which fueled this idea in the first place. I had just gotten back from San Francisco the night before and I was up early the next day running around trying to catch a bus to my friends house. At this point I was thinking perhaps I had over committed myself, which I tend to do, but when we got to the farm I knew I had made the right choice.

They had u-pick everything! They had marionberries, raspberries, tayberries, boysenberries, blueberries, and blackberries! I was in berry heaven. Every row seemed to be more exciting than the next. I just picked and picked until it was time to go and that’s when I realized I had picked 17 pounds of berries in the same time my friends picked half as many.

mother/daughter 13th annual camping trip-part 1

Wow it’s hard to believe my mom and I have been taking the same vacation now for 13 years! It never gets old though! We look forward to visiting familiar places and discovering new places. We jam pack our few days of “camping” to the brim. I say “camping” because, while we do sleep in tents, we sleep on cots and are able to use regular toilets and shower daily. That way when we head into the little towns to explore we look put together but we can still come back to camp and have a fire at night.
