Wine Outing

Over the weekend my coworker and her husband took Walker and I and another coworker on a wine tour in the Texas Hill Country. We ended up with a beautiful day and very pleasant weather. We tasted wine at a couple of wineries before spending a bit longer at the third enjoying the picnic lunch we packed. It was full of delicious cheese, meats, bread, and fruit. It was so good! After the wineries they invited us to their home and cooked us all dinner and we ended the evening searching for constellations in the night sky (they live a bit out of town so you can actually see the stars). We had such a great day with wonderful people.

Weekend Cooking-Marinated Chicken

I love having the weekends to take my time and prepare a meal from start to finish, I find it so satisfying-even more so when it turns out tasting so good. I purchased some drumsticks from the store and had in mind to marinate them. I found a recipe but adapted it to what I had/my liking. It was supposed to be all lemon juice but I didn’t have enough so I added a lime and an orange. Here it goes…

1/3 cup citrus juice (I used lemon/lime/orange)

2 TBSP zest (lemon/lime)

2 TBSP thyme (from my garden)

1 TBSP rosemary (from my garden)

2 cloves of crushed garlic

1 tsp salt

1 tsp pepper

1 tsp crushed red pepper

Whisk all the ingredients together in a bowl

Cut slices into the chicken pieces (I used 6 drumsticks with this recipe) and add chicken/marinade to plastic bag and let sit in refrigerator for 2 hours

Cook at 425 degrees until the internal temp of the chicken is 160 degrees F (it took about 45 mins for me)

I served with rice, arugula salad, and green beans

Music Week Part 2

Next up during music week was a really fun Yelp party! Luckily Walker volunteered for the event and got me on the VIP list with him. That just meant we got to skip the line, but that was pretty cool! Anyhow they had free food, drinks, and various goodies all around. There was music, hula hooping, some games, a vintage pop-up shop. It was quite fun. The weather was mostly good too, I was glad it was overcast but it was a little too humid for my taste. Ug, sweaty face. I resisted the hula hooping for as long as I could but finally gave in near the end of the party, I was glad I did. It takes me back to the days I would hula hoop in my living room for as many songs as I could in a row. I bet that was GREAT exercise.
