Berry monday: pancakes

August 19, 2013

One of the most common berry pancake seems to be blueberry but with all the berries I had picked I decided to mix it up a bit. I made some vegan pancakes with blueberries and  tayberries mixed in. Making them is easy:

-find your favorite pancake recipe, here is a good fat free vegan one.
-fold in 1 cup of any berry you’d like.
-cook as directed (usually about a 1/4 cup on a hot skillet until lots of bubbles form and then flip and cook for a couple more minutes)
-sprinkle with more berries and serve with maple syrup or maple butter.

I made a vegan chocolate pie based off of this recipe. In the filling mixture I left out the extra sweetener and the cinnamon. This pie is so rich and delicious you only need a very skinny slice to satisfy that sweet tooth.

Berry monday: galette

August 12, 2013

It’s berry Monday again! This week I used a mix of berries to make a galette.

I used blueberries, tayberries, and marionberries.

I used a vegan galette recipe that I found over at My New Roots. I left out the thyme from the filling and used berries instead of stone fruits. I also left out the poppy seeds in the crust but mostly just because I didn’t have any. I mixed the filling, rolled out the crust after it had chilled, folded up the sides and baked it. It was really tasty.

I also made a blackberry galette with the wild blackberries I picked. It was equally delicious. Galettes are really easy to make and you can put just about any filling you want in them. I would recommend a berry peach one. Mmm…is it time to make another?
