Sometimes I like to make dinner feel extra special. When I started making this meal I didn’t intend on it being “fancy” but somewhere along the way I decided it should be. I chose to present it in 4 courses-all being modest sizes (assuring Walker that after the first 3 courses he could have more before the 4th course-dessert-was served).
Course 1: Mixed green salad with beets and tahini lemon dressing.
Course 2: Roasted potatoes and sunchokes.
Course 3: Curried butternut squash soup with toasted homemade bread.
Course 4 (dessert): Tea with pepparkakar cookies (recipe in this post here).
